Bossam literally means "wrapped in ssam (vegetables)". It is a pork dish that usually consists of pork belly that is boiled in a flavourful brine and served thinly sliced. The meat is then wrapped with vegetables (eg. lettuce & perilla leaves) along with an array of condiments like sliced raw garlic, green chilli, ssamjang and kimchi.
