Ingredients for the sauce using our homemade Chilli Oil:
Chilli oil 3 tbsp (add more if you want it spicier)
Black vinegar 3 tbsp (recommended: Gold Plum brand)
Salt 1½ tsp
Sugar 4 tsp (add more if you find it too sour)
Vegetarian oyster sauce 4 tsp
Hot water 2 tbsp
Spring onions 3 tbsp (finely chopped)
Ingredients for the wonton filling:
Tau Kwa 1pc (big)
Dried shiitake mushrooms or Wood fungus 20g (softened and julienned)
Water chestnuts 8-10pcs (skin off and diced)
Chives 80g (finely chopped)
Shallots 3-4pcs (finely chopped)
Garlic 2-3pcs (finely chopped)
Ginger 3cm (skin off and grated)
Sesame oil 2 tsp
Vegetarian oyster sauce 1 tbsp
Light soya sauce 2 tsp
Salt ¼ tsp
Sugar ½ tsp
For wrapping: dumpling or wonton wrappers
For garnishing: chopped/julienned spring onions
Mix together in a bowl, all the ingredients for the wonton filling and set aside till ready to use.
In another bowl, combine all ingredients for the sauce and adjust taste if necessary. Set aside and allow flavours to infuse till ready to use.
Wrap the wontons and boil till cooked.
Toss the cooked wontons with the sauce and garnish with spring onions before serving.
