Using our homemade Sambal Chilli:
3-4 tbsp Sambal Chilli
Prawns (or squid) ½ kg - devein
Big red onion 1pc - cut into chunky wedges
Big tomatoes 2pcs - cut into chunky wedges and deseed
Tamarind water (mix 2 tbsp of tamarind pulp with ¼ cup water & strain)
1) Add oil in a wok and fry big red onions till slightly caramelised.
2) Next add 3-4 tbsp of sambal chilli and tomatoes to the wok and fry till soften.
3) Add prawns, tamarind water and salt/sugar to taste.
4) Turn off heat when prawn is cooked.
5) Serve with plain or coconut rice.
