Using our homemade Buah Keluak Rempah: (serves 3-4 paxs)
3-4 Chicken Marylands (6-8 chicken pieces)
1 portion rempah (200g)
1-2 tbsp cooking oil
15-20g tamarind/assam pulp (mix with 100ml water and strain=assam liquid)
Salt
Sugar
Light soya sauce
1) In a wok, add cooking oil, Buah Keluak rempah and chicken pieces and cook over medium fire.
2) Fry till chicken pieces are half cooked before adding in assam liquid. (Use more assam for the assam liquid if you prefer it more sour.)
3) Mix well and simmer over low heat till chicken pieces are cooked through and liquid has reduced .
4) Taste and add in seasoning if needed.
5) Serve hot and best eaten with rice.
