Coffee Chicken/Coffee Pork Ribs

Boneless chicken thigh pieces laced with coffee sauce

Made using our homemade Coffee Sauce:

1 portion Coffee Sauce (200ml)

Garlic 4-5 whole cloves (lightly bruised)

Big red/yellow onion ½ piece (cut into wedges or quartered)

Young ginger 5-6 cm (cut into chunky pieces, lightly bruised)

Cooking oil 3 tbsp

Corn flour slurry (optional)


Boneless Chicken Thighs 2-3 pieces/600-800g (cut into bite size pieces) OR Pork Ribs 800g (cut into 1"-1.5" lengths)

Chicken/Pork Ribs marinade: (at least 2h before frying)

- add ¼ tsp salt, ¼ tsp pepper, 1-2 tbsp sesame oil, 2 tsp light soya sauce (½ tsp bicarbonate of soda for pork ribs OR 1 tbsp ginger juice for chicken)

- add 3 tbsp corn flour and mix well just prior to frying



1) Deep fry marinated chicken pieces/pork ribs till fully cooked and leave aside till ready to use.

2) Remove excess oil from the frying pan, leaving only 3 tbsp oil in the pan.

3) Add into the pan, garlic, onion and ginger and fry till fragrant. Remove till ready to use.

4) Using the same frying pan, heat up our homemade Coffee Sauce before adding in the pre-fried chicken pieces/pork ribs to the sauce. (If the coffee is too strong/bitter, add in 1-2 tbsp of sugar to the sauce and let it melt completely before adding chicken/pork and condiments.) Toss in the garlic/red onion/ginger to the pan and mix well together. Use a corn flour slurry to thicken the sauce if desired.

5) Remove from heat and serve with white rice.
