Using our homemade Laksa Rempah: (serves 2 paxs)
500g Laksa Noodles
1 portion rempah (200g)
*1-1 ½ C prawn/chicken stock
*100-150ml Kara coconut cream (add more if u want it more lemak or less spicy)
¼ tsp salt }
1 heaped tsp sugar } adjust according to your desired taste
2 tsp light soya sauce }
Suggested condiments: prawns, tau pok, fish cakes, eggs, chicken meat and laksa leaves.
*quantity of stock & coconut cream can be adjusted to your liking
1) Prepare condiments for garnishing and set aside till ready to use.
2) Using medium heat, mix together laksa rempah and stock in a wok before adding in noodles. Depending on the texture of the noodles (whether at room temperature or straight from the fridge), more stock may be needed in order for the noodles to soften slightly.
3) When noodles have softened, add in tau pok, fish cakes and mix well.
4) Lower heat to a simmer before adding in coconut cream.
5) Add in seasoning as desired before removing from wok.
6) Garnish with eggs, prawns/chicken and laksa leaves. Best eaten immediately.
