Using our homemade Laksa Rempah: (serves 2 paxs)
500g Laksa Noodles
1 portion laksa rempah (200g)
1L prawn/chicken stock
100ml Kara coconut cream
Salt, sugar & light soya sauce - add as needed
Suggested condiments: prawns, tau pok, bean sprouts, fish cakes, eggs, chicken meat and laksa leaves.
*quantity of stock and coconut cream can be adjusted to your liking, depending on how lemak you want your broth to be
1) Prepare noodles separately by blanching it with hot water. Drain and add a little oil (to prevent noodles from sticking together) before setting aside till ready to use.
2) Prepare condiments for garnishing and set aside till ready to use.
3) In a saucepan, reheat laksa rempah together with prawn/chicken stock. If using tau pok, add in now to allow broth to infuse into the tau pok.
4) Lower heat to a simmer before adding in coconut cream.
5) Taste broth and add in salt/sugar/light soya sauce if needed before serving with noodles and garnishing.
6) Serve hot.
